Easy Pizza, Two Ways




If you're looking for a simple go-to kind of meal for weeknights, here's one you might enjoy. This past Wednesday we had a combination of veggies we needed to use up from our CSA drop and really awesome stuff I picked up at the farmers market earlier in the day.

Savory
I didn't feel like putting much energy into dinner, but as usual I did want to eat a good meal. One quick trip to the store on the way home from work later, and about 20 minutes post arrival we had ourselves a mighty fine meal comprised of one savory and one sweet pizza.

For the savory pizza I took a pre-baked pizza crust and topped if off with some fresh mozzarella, arugala and basil. If you weren't aware of the awesomeness that is pre-baked pizza crust, you're welcome. Seriously, they are the best go-to pantry item to have hanging around because the possibilities of use and preparation are pretty limitless. Once everything was placed on top, it took about 15 minutes to bake.

Sweet

While that guy was baking, I took a box off Jiffy Pie Crust mix and got to work. And by work I mean I added a couple tablespoons of water, mixed and flattened it. Until yesterday, I only loved Jiffy for its cornbread mix but now I love it even more. This was the easiest pie crust I've ever baked. To top it off I spread some lite, vanilla yogurt fruit dip and then covered that with fresh strawberries. Even Ben, the Pie/Pi Master conceded that it was a great crust.

There you have it. A simple dinner made with simple ingredients that is sure to please. Buen provecho!

If Ben said it was good pie it must be so! Though I wouldn't expect anything less than delicious from you!
