Because I'm not the baker of the family (that would be Ben), I have figured out a few short cuts to creating sweet treats without much work. Enter, the box mix. Boxed cake and brownie mixes have saved me quite a few times, so I thought I would share how.
Sea Salt and Lime Brownies- All you need to do for these is take your favorite brownie mix and add 1/4 cup of lime juice when combining the wet ingredients. Then after you bake them using the directions on the box, sprinkle with a tablespoon of kosher salt and a tablespoon of lime zest.
Almond and Ginger Cupcakes- Take a white cake mix and add a teaspoon of almond extract and a tablespoon of ground ginger when combining ingredients. For the icing, I just whipped some whipping cream up and folded in diced candied ginger using the same candied ginger as a garnish.
These two box mix hacks are so simple and the possibilities are endless. My advice- stock up on a few boxes that you know you'll enjoy and then when the time comes, just use what you have around the house. Simple, easy and delicious!
