In the Kitchen: Breakfast Tostadas


Ready for a simple breakfast recipe for yourself or a crowd that is full of flavor? Thought so.

A few weeks ago Ben and I tried out a new creation I'm calling, The Breakfast Tostada. It is perfectly customizable but this is how I made mine.

I started by taking one can of black beans (1/4-1/3 can per serving at most) and pulsing it in the food processor with a dash of garlic powder, cumin, and oregano. Meanwhile, I popped two hard tostada shells in the oven at 450 degrees for about 5 minutes (tops) and fried up two eggs (over-easy).

Once I had the tostadas out of the oven and the black beans ready I layered everything as follows (bottom to top):

  • Tostada shell
  • Black beans
  • Chipotle taco sauce
  • Shredded pepper-jack cheese
  • Tostada shell
  • Black beans
  • Eggs (yolks still runny)
  • Cheese
  • Avocado 
  • Salsa
  • Hot sauce (but that's just a given)

So easy. Am I right?

Like I said, you can really customize this recipe to your own tastes. I'm thinking some pepper or tomato jam could be something fabulous to work in there. Maybe bacon (too easy?) or shredded chicken or ground turkey? Any way you choose to make it, I hope you enjoy!
