Thoughts of a vegan Lent

Alright everyone, I'm looking for some advice. As I think about the Lenten season coming up next month, a thought keeps popping up in my head. Could I go vegan for Lent? Some of you might also celebrate Lent, but for those who don't, it is the 40-day period of time before Easter largely used as a time of meditation, focus, and introspection. There are those that chose to "give up" something such as chocolate or ice cream or swearing as means of sacrifice and a way to remember daily what Lent means to them. Last year, I decided to go without meat during the Lenten season and I can't help but want to push myself a bit. I know it's better for the environment. I know it promotes a more animal friendly way of life. I have also read many articles touting the health benefits of a vegan lifestyle. So, why is it such a scary endeavor?

I can tell you right now one reason is my unchanging love of bacon and anything that is paired, mixed or somehow incorporates bacon. Plus, I'm a huge dairy and seafood fan. It seems though, that a time of self-study and contemplation might be the perfect time to explore a vegan diet.

I think it's an interesting idea. My only concern is if Ben doesn't do it with you, will you be more wasteful making meals for 1? Or will he be more wasteful? Just something to think about...
