G’day Romantic Hippie! Lisa here, filling in as guest blogger for a quick post about what’s happening down under. Australia may seem too far for those of you living stateside, but in my opinion it’s well worth the trip. Especially since what I have to share is downright awesome and you are all going to want to experience if for yourself... Greenhouse by Joost.
Greenhouse, a project by artist Joost Bakker, is a revolutionary eco-friendly restaurant that promotes completely sustainable business – from the construction techniques to the daily operations. Recycled and recyclable materials make up the physical building structure, and the restaurant/café/bar runs so efficiently that it creates no waste at all. Seriously? Seriously.
Greenhouse water is collected on site, waste is recycled, ingredients are grown on the rooftop garden and even the generator runs on cooking oil. Fresh produce and milk are delivered in returnable containers, while wheat bags are sent back to a local farmer for re-use. And on top of ALL that, every scrap from the kitchen is composted and used in the garden.

Greenhouse’s menu is supposedly just as impressive. With famous Aussie talent Matt Stone running the kitchen, the menu changes daily to feature new, simple creations. Ingredients are either made on site (breads, pastries, butter) or sourced locally.

The Greenhouse Sydney will be here for just 8 short week before taking off on a world tour. Next stop is Europe, so if you can’t make it to Australia….well….yeah… I guess Europe is sort of ok. Meh….
