When all else fails, polenta


So you have a fridge full of leftovers and don't have a lot of time to put into making a meal but don't feel like eating the same thing over and over again. I totally get it. We've all been there.

There is one staple I keep in my pantry to help out with this problem that I think you should know about.
It's polenta. The kind that is pre-made and comes packaged in a log like goat cheese or sausage. All you need to do is cut it in 1/2 inch rounds, throw them in a pan with some olive oil for about 5-10 minutes per side and then stack them with your reheated leftovers.



Pictured above are what I did with some chicken I had already made and leftover tomato sauce from a pasta dish. This is just polenta stacks, plus some parmesan, and basil from the garden. So tasty.


For these stacks I had a little bit of sauteed kale that I had previously used as a side item and leftover beef brisket from a family event. Add the polenta, stack it all together and voila!


Then for these, I had some spinach and eggs and not much time (and a lower quality camera- sorry!). Again, polenta stacks. Again, really delicious and so easy.

I totally recommend this trick and keeping some of this stuff around at all times. It always comes in handy at our house! So, try it out and let me know what you find to pair well with this stuff. I'd love to know!
