After last weekend's festivities we had some extra food laying around so I tried to reinvent our leftovers and give them a little bit more life.
After the colcannon fritters, I had an entire half a head of cabbage left. I took a look in the fridge and had some carrots from our CSA and some walnuts in the pantry so I decided to chop it up into a slaw. To dress the slaw I took 1/4 cup rice vinegar, 1/2 cup olive oil, a tablespoon of honey and salt and pepper. I let it sit overnight and the next day it was quite tasty!
After the Stout Cake and Irish Whiskey Ganache, I had two extra cups of ganache! In retrospect, I should have just put more on the cake. We used the extra chocolate the day of by mixing it in with our Bailey's and coffee which was delicious. After the party, I let the ganache firm up in the fridge overnight then rolled it into balls and dipped them into cocoa powder. Behold, Irish whiskey truffles!
Not too shabby! Remember, when you have a surplus of leftovers- be creative with how you re-use them. You'll be more inclined to not waste them and have a great treat to enjoy!
