St. Patty's Re-cap: Corned Beef Hash

This recipe was a hit at our party and probably one of the easiest to put together. Ben loves corned beef hash so I put this together for him but everyone seemed to like it. I even had to make two rounds it went so quickly!

What you need:
2 lbs sliced corn beef (from the deli section of your grocery), diced into small pieces
1 large bag frozen has browns
1/2 yellow onion, diced
Olive oil

The plan:
In a skillet, warm 2 tablespoons of olive oil. Place your onions in and cook until translucent. Add hash browns and corned beef. Stir to combine and then let the mixture sit for a couple minutes before stirring again. This will help you get a nice crunch.

Once the bottom of the mixture has browned, stir and flip continuing the process until your hash browns are cooked through and golden brown. Serve warm and toss in a little fresh parsley if you are feeling fancy.

This is the first time I had ever made corned beef hash from scratch and it has given me all sorts of ideas for different kinds of ingredients I can use. I'm thinking a sweet potato hash could be fun in the future! What do you think?
